Coriander is the seed of Coriandrum sativum, a plant in the parsley family. Coriander Seeds are globular and almost round, brown to yellow red, and 1/5 inch in diameter with alternating straight and wavy ridges. Coriander seeds when crushed have a lemony citrus flavor and are nutty, spicy and orange-flavored. Whole Coriander seeds are used for general digestive aid. 

History 
The use of coriander can be traced back to 5,000 BC, making it one of the world's oldest spices. It is native to the Mediterranean and Middle Eastern regions and has been known in Asian countries for thousands of years. Coriander was cultivated in ancient Egypt and given mention in the Old Testament. It was used as a spice in both Greek and Roman cultures, the latter using it to preserve meats and flavor breads. The early physicians, including Hippocrates, used coriander for its medicinal properties, including as an aromatic stimulant. 

The Russian Federation, India, Morocco and Holland are among the countries that commercially produce coriander seeds. Coriander leaves (cilantro) are featured in the culinary traditions of Latin American, Indian and Chinese cuisine.

Coriander has a mild, distinctive taste similar to a blend of lemon and sage. It is a fragrant spice.

Coriander requires cool climate during growth stage and warm dry climate at maturity. It can be cultivated in all most all types of soils but well drained loamy soil suits well. It is observed that quality of seed is superior & essential oil content is more when the crop is grown in colder regions & at high altitudes.

Traditional Ethnic Uses
Coriander is used in Faridabadn curries, gin, American cigarettes, and sausages. Also called Chinese parsley, cilantro. The commonest use of coriander is in curry powders, where it is the bulkiest constituent. The seeds can be used in stews and soups. Coriander is an ingredient of garam masala, pickling spices and is used in cakes, breads and other baked foods. Coriander compliments chili and is included in many chili recipes such as harissa, the hot North African red pepper sauce.
